Plum Corn Scones

Its New Year and its time for some baking!!!!!! Scones can be made either sweet or spicy. I just happened to have dried plums (prunes) at home so I made the sweeter version. This recipe can be made with any dry or fresh fruits. This is an excellent way to have breakfast or just munch few on a tea time like I did. Very easy and tasty dish and most importantly healthy too...
Preparation Time : 20 minutes
Makes upto : 15


Ingredients : 
All Purpose Flour (Maida) - 1 cup
Cornmeal - 1 cup
Baking powder - 2 tsp
Baking soda - 1/8 tsp
Salt - 1/2 tsp
Sugar - 3 tbsp
Cold, unsalted butter - 6 tbsp
Buttermilk - 2/3 cup
Egg - 1 large
Dried plums - 1/2 cup finely chopped (Use any dried or fresh fruits)


Method : 
  1. Preheat the oven to 375F or 190C.
  2. Mix all the dry ingredients and set aside.
  3. Whisk together buttermilk and egg. Cut the butter into small pieces and add to dry mixture.
  4. Make a well in the dry ingredients and add the buttermilk mixture and dried plums and mix until just combined.
  5. Grease a baking sheet with butter or oil and place equal sizes of batter an inch apart.
  6. Bake for 15 minutes until you see slight brown layer on top.
  7. Cool it down for 10 minutes and serve them for breakfast or snack.
Note : 
  • Make sure eggs are on room temperature.
  • 2/3 cups = 1/2 cup+4 tsp
  • 1tbsp= 3 tsp
  • For more healthier version use unbleached white flour or spelt flour instead of bleached white flour (maida).
