Ingredients :
All Purpose Flour (Maida) - 1 cup
Cornmeal - 1 cup
Baking powder - 2 tsp
Baking soda - 1/8 tsp
Salt - 1/2 tsp
Sugar - 3 tbsp
Cold, unsalted butter - 6 tbsp
Buttermilk - 2/3 cup
Egg - 1 large
Dried plums - 1/2 cup finely chopped (Use any dried or fresh fruits)
Method :
- Preheat the oven to 375F or 190C.
- Mix all the dry ingredients and set aside.
- Whisk together buttermilk and egg. Cut the butter into small pieces and add to dry mixture.
- Make a well in the dry ingredients and add the buttermilk mixture and dried plums and mix until just combined.
- Grease a baking sheet with butter or oil and place equal sizes of batter an inch apart.
- Bake for 15 minutes until you see slight brown layer on top.
- Cool it down for 10 minutes and serve them for breakfast or snack.
- Make sure eggs are on room temperature.
- 2/3 cups = 1/2 cup+4 tsp
- 1tbsp= 3 tsp
- For more healthier version use unbleached white flour or spelt flour instead of bleached white flour (maida).
