Tomato Thokku

How easy is that when you wake up in the morning, make just dosas and homemade thokku is ready to be served? I love waking on a lazy morning and my breakfast is already ready. This recipe is one easy sidedish that goes along with rotis, idlis, dosas and curd rice...., you name it, it just works fine.
Ingredients :
Ripe tomatoes - 6-7 chopped
Red Chilli Powder - 2 tsp
Coriander Powder - 2 tsp
Cumin Powder - 1 tsp
Turmeric Powder - 1/4 tsp
Fenugreek Seeds - 1 tsp
Jaggery - 1 tbsp
Mustard Seeds - 1 tsp
Asafoetida - 1/4 tsp
Curry Leaves - 2 springs
Sesame Oil - 1 laddle
Salt - 2 tsp

Method :
  1. Roast and ground fenugreek seeds into fine powder.
  2. Heat sesame oil in a pan, add mustard seeds, asafoetida, curry leaves.
  3. Add chopped tomatoes and all the powders, salt, cover and cook on medium high flame for 8 minutes stirring occasionally.
  4. Add 1 tsp of fenugreek powder, jaggery, uncover and cook till oil seperates from the mixture. Tomato will not stick to the bottom and oil will float on top.
  5. Switch off the flame, cool and save in airtight container.
Note :
  • If you dont prefer the skin, make two slits at the bottom of each tomato drop them in hot water for 2 minutes. Place them immediately in cold water and remove the skin and then chop.
  • I used 2 tsp of homemade sambar powder instead of coriander powder and cumin powder.
  • I used Aachi Chilli powder which is very spicy. Try kashmiri chilli powder which is less spicier.
