I know the name sounds fancy. This recipe was lying in my laptop for sometime now finally its seeing the limelight. If you are from south India this is a very common recipe in every household. My mom pressure cooks the eggs and cuts it into pieces and they look like dhokla. I thought instead of pressure cooking it, why not bake it? I made a spicy cake with beaten eggs and cut them into pieces before adding them to my kurma. Play with it and make different kurmas and add egg at the end. The egg absorbs some of the liquid and it tastes heavenly.
Ingredients :
For the spicy cake :
Beaten Eggs - 5
Onions - 1/2 cup (finely chopped)
Green Chillies - 2 (finely chopped) optional
Ginger - 1 tsp (finely chopped)
Turmeric Powder - 1/2 tsp
Red Chilli Powder -1 tsp
Curry Leaves - 1 spring (finely chopped)
Coriander Leaves - 1/4 cup (chopped)
For the kurma :
Onion - 1 medium
Ginger Garlic Paste - 1 tbsp
Tomato - 1 medium
Chilli Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Coriander Leaves - for garnish
Salt - to taste
Roast and Grind :
Cinnamon - 1 small stick
Cloves - 2
Star anise - 1 small
Pepper - 2 nos.
Coriander Seeds - 1 tbsp
Fennel Seeds - 1/2 tsp
Cumin Seeds - 1 tsp
Poppy Seeds - 1 tsp
Method :

Roast and Grind :

Grind :
Grated Coconut - 1/2 cup
Cashewnuts - 1 tbsp (Optional)
Method :
- Preheat the oven to 375F.
- Beat the eggs for 5 minutes, spray oil in a oven proof dish and add beaten eggs and everything under spicy cake and bake for 25 - 30 minutes.
- Let it rest for 10 minutes and loosen the edges with a knife and remove the cake and cut them.
- The more you beat the egg, the cake will rise and more fluffier it will be. Once it cools down it will shrink a little bit.
- Now for kurma, heat oil in a pan, add onions, then ginger garlic paste, let the raw smell goes and add tomatoes. Add the ground masala, saute till the raw smell goes.
- Add the powders and water and let it come to a boil and cook for 5 minutes. Add the coconut paste and reduce the heat.
- After five minutes switch off the flame and add the egg cakes. Let it sit for 15 minutes before serving.
- Garnish with cilantro leaves and serve with hot rice or rotis.
- If you dont have a oven to bake, do it the old fashioned way by pressure cooking it.
- Place the eggs in a vessel coated with oil, cover it and then place it in the pressure cooker.
